The Lab - Brewed to Life

It was by pure luck that I stumbled upon this cafe; the cafe I originally intended to visit, Hyde & Co., was closed for a private event. 



The Lab dishes out a mix of European-styled food. 



Its menus have clips protruding from their sides, enabling them to be hung onto the metal mesh boards and bronze pipes that ran along the entire walls.

Natural daylight filters through the skyroof and entrance doors, and one can't help but wonder if the ceiling lamps are bright enough to chase darkness away as evening draws nearer.



Although hazelnut flavor was not present in the Hazelnut Chocolate Flavored Milk ($5.50 for hot, $6.00 for cold), it was still passable, with the drink being neither too rich nor dilute. 




La Carte Le Fish ($17.90) is barramundi resting in saffron shellfish reduction (a liquid mixture), roasted and baked with bacon, and served with grilled sweet potato. The sweet potato sticks were on the hard side and one could taste the tangled fibres with each bite. One of the sticks was particularly bad; the stiff ends were inedible.

The fish skin may be beautifully crispy, but saltiness clung to it. On the other hand, the flesh was fresh and seared well on the bottom. It tasted lightly of pepper, and the herbs used complimented its flavor well.


For all its scientific atmosphere, The Lab failed to deliver on the speed of its service. Both drink and food took about 30 minutes to arrive, which was abysmal. It's recommended not to come here if you're short on time.
